Hard to believe 69 days have passed since the hubby and I decided to hibernate within our own walls. Even though restrictions have lifted and there is some reopening in Houston, we’re continuing to stay close to home except for a few masked trips to the grocery. Today, however, I did venture out for a badly needed haircut which was pretty exciting!

Through all these days, most of our meals have been prepared at home, and pasta dishes top our list of favorites. Most of the noodles have been homemade, a joint effort of the hubby and me. He cranks, I feed the pasta dough through the machine.

There is no end to what can be done with pasta. We’ve had lasagna, ravioli and a variety of dishes made with the more traditional spaghetti.

If I had to pick one favorite, it would be lemon pasta so easy to prepare and so very good. I think even the fussiest kid would like it!
Lemon Pasta
For 4 servings I used about 12 ounces of pasta cooked in boiling, salted water. Before draining, I saved some of the liquid, 1-1 1/2 cups. Homemade pasta cooks very quickly, 4-5 minutes, otherwise follow package directions.
The sauce is made by combining 1 cup of cream with the zest from one lemon and cooking it over medium heat until it starts to bubble. Then one cup of the pasta liquid, salt and pepper to taste is added. Finally 1 cup of Parmesan is stirred in and blended well. If the sauce seems too thick, add more of the pasta liquid. Last but not least blend in 2-4 tablespoons of lemon juice depending on how much lemony flavor you like. When it is dished up, top the pasta with a few thinly sliced pieces of lemon peel.
As you can see, this dish takes only minutes to prepare so it’s a good one for busy days. A green salad and some crusty bread is all that is needed to complete a very tasty meal.
Pasta seems to shine with the simplest of sauces and your sounds wonderful.

My son also loves lemon pasta! Totally agree it’s the easiest to do but really light and refreshing to eat. I add some fresh rocket leaves too and a bit of basil. 🙂 – amor

Oh how very nice to be able to go to the hairdresser again. I’ll have to check and see what’s going on with salons around here. That lemon pasta dish looks very refreshing.
