Good Eats


Funny how when temperatures drop as they are now, there is an increased desire for comfort food.  When I think of warm soups and stews they remind me of being wrapped in a cozy blanket.  Hmmm, I’ve talked myself right into making a big pot of soup!

Today the chill winds and lower than usual temperatures do not encourage a trip to the grocery.  That means making do with what’s in the pantry and refrigerator.  Luckily, there’s just what is needed estimate house favorite potato Kale soup it’s an easy one that is very tasty to make a house favorite potato kale soup.  It’s an easy one that is very tasty.

Potato Kale Soup

Potato Kale soup4 tablespoons olive oil

2 medium onions, chopped

10 cloves garlic, chopped

1⁄2 tablespoon red chile flakes or to taste

1 1⁄4 teaspoons salt

6 medium potatoes, peeled and diced into 3⁄4 inch cubes

3 cups coarsely chopped kale

chicken stock

black pepper

smoked sausage (optional)

Heat oil in soup pot; add onions, garlic, chile flakes, and salt, and sauté until onions are translucent. Add potatoes and enough chicken stock to cover by 4 inches. Bring to a boil and cook, covered, until potatoes are about half done. Add kale and cook, uncovered, until potatoes are tender, 10-15 minutes. Puree soup in blender or food processor. Season with pepper to taste.  If you add sausage, do this after pureeing and reheat the soup.  Makes 6-8 servings.

Served with cornbread muffins, the soup is perfect with or without the sausage. I just happen to that adding it will make the hubby very happy.

  1. I used to make a dish similar to this often, then I forgot about it one winter and haven’t made it since. Will have to try this! I need a warming potato kale soup back in my life right about now 😊

  3. That sounds wonderful…I was out in the cold yesterday, wind chill in the 20s here!!! First thing I did when I got home was make a pot of soup, soooo good!!
