In our house, a favorite food is anything TexMex. We have some variation of it at least once a week and never tire of its goodness. This week is my turn to prepare dinner for the four of us who share meals, and TexMex is going to be front and center.
TexMex always inspires a colorful table, and this one begins simply with a skeletal lady standing on a woven runner. She and the little terra cotta pieces were long ago purchases in San Miguel.
Then are added colorful plates and glasses for mango margaritas. Yes, one has to have a margarita with TexMex.
Each of the napkins was folded to make a pocket for flatware.
All done, the color filled table couldn’t be simpler, and Maizy added her approval!
As the table was being set, I was thinking about what to serve and decided on chicken enchiladas, always a favorite. I thought to serve black beans as a side, but as I dished the enchiladas up I thought it would be fun to top them with the beans and salsa.
On the table were the traditional accompaniments, guacamole, sour cream and salsa in case anyone wanted to add more. All that’s left to do is pour the margaritas and gather round to enjoy another of our delightful shared evenings.
