Best Ever Lemon Pie


My favorite dinner party these days is one where everyone brings something. Most people ask what they can bring, and no one seems to mind being assigned an appetizer, a salad or dessert. Contributing makes everyone feel involved, it adds a little something unexpected to the meal, and the best part is that none of us have to spend the whole day in the kitchen.

At a recent gathering of friends, Pam brought a sensational lemon pie which was gone in an instant and left everyone wishing for more…..too bad she didn’t bring two! When something is that good, everyone wants the “how to”, and she was generous enough to share her recipe. Hopefully, it is not an old family secret because it won’t be once you get a taste of the pie!


Pam’s Delectable, Delicious, Yummy Lemon Pie

1 c. sugar                                                       1/3 c. lemon juice

1/4 c. cornstarch                                        1/4 c. butter

1 1/4 c. milk                                                 1 c. sour cream

3 egg yolks, beaten                                    prepared pie crust

1 t. grated lemon rind

In a saucepan, combine sugar and cornstarch. Gradually stir in milk til smooth. Add eggs, lemon rind and juice and mix til well blended, add butter. Stirring constantly, bring to a boil over medium heat and boil one minute. Pour into large bowl, cover surface with plastic wrap and cool in refrigerator until almost set (about 40-50 minutes). Fold in sour cream, pour into crust and top with whipped cream.

Pam’s pie was in a traditional (probably homemade not Pillsbury rollout) pie crust, but I’m betting this would also work in a graham cracker crust. Just thinking about this pie makes my mouth water…..think I’ll head to the kitchen right now.

    1. Good either way, but graham cracker crust is definitely my favorite.

    Oh this looks good Lulu! Sour cream in a pie, different and yummy! Interesting thought about the apple corer for the cupcakes… might just work-have fun:@)
